Chutney

I am not a big chutney eater myself, though I do like a little to wake up a chicken or cheese sandwich, so I have allowed the chutneys I make to be guided by customer feed back.

As a general rule (probably because I don’t like vinegar very much) my chutneys are pretty fruity, Generally 70% fruit with about 15% vinegar and 15% sugar.(This is lower in both Vinegar and Sugar than most conventional recipes). Because the fruit taste predominates over the vinegar I produce many of the chutneys with a fairly light spice mix. Though I do produce other chutneys with hotter spice mix to suit the palate of some of my customers.

Where as with Jam and marmalade I generally work with clearly measured recipes, with most of the Chutneys I tend to work in the time honored way of using the ingredients to hand and balancing the preserve by tasting and testing, So if you find a jar you like, enjoy it! you may never find exactly the same taste again!

Balsamic roast onion chutney

This is cooked for several days to develop the sweetness of the onions. Lightly spiced with mustard seed. for other onion preserves see Know your onions!

Banana Chutney

Yes. I was horrified too when I first saw this recipe, but it works really well. A mellow chutney spiced with garam masala & cumin.

Beetroot Jelly

Not exactly a chutney, this mild accompaniment is made with pureed beetroot in a fruit jelly base.
