These are thick smooth spreads that contain eggs and butter as well as the fruit pulp and sugar
I make batches of lemon Curd on a regular basis. Because these have a short shelf life and are best refrigerated these are mainly for my farmers market customers though I can make batches to order.

Butters
Just to confuse matters Butters do not contain any butter. They are a smooth thick spread made from pureed fruits cooked slowly with the sugar

Cheeses
These do not contain cheese either! They have the name because they were traditionally served instead of a cheese course.
They are a really thick smooth glossy preserve made from sieved fruit cooked very very slowly for a long time. They are only made from fruit which has a very high pectin content. They become so stiff that you can unmold them from the jar . ( I use a special terrine for this purpose). You can slice them and use them instead of cheese, as an accompaniment to rich meats, as part of a dessert, or just as a spr
