Marmalades

When I started with the farmers markets, I took along a marmalade. I had some takers, but I soon discovered that marmalade is the area where people have a really particular idea of what they need. Some people need the reassurance of having the same type of marmalade day in and day out. Other people need the stimulation of novelty.

All of my marmalades are higher in fruit and lower in sugar  than conventional home made marmalades but I produce a range of tastes and combinations. Here are some of them.

Seville Marmalade

My most straightforward marmalade, still a little sharper and chunkier than most.

 

Wake Up! Seriously Sharp Seville Marmalade

My first Gold Award Winner. After a number of my regular customers told me they like a sharp marmalade I took them at their word. This is possibly my biggest seller.

 

Pink Grapefruit Marmalade

Silver Award Winner. A very low water marmalade with a distinctive taste and beautiful colour.

 

Very Chunky Marmalade

I have to slice this one by hand so I only make a limited number each year.

 

No peel Marmalade

With the taste but not the peel.

 

Whisky Mac

With Whisky and Ginger

 

Seville with stem Ginger

With the addition of freshly squeezed root ginger juice and stem ginger pieces.

 

Seville with Apple & Ginger

With pureed apple and fresh ginger juice.

 

Autumn Marmalade

With the addition of fine slices of Bramley apple

 

Spiced Seville

With coriander, Ginger and Cardamon

 

Into the dark

With the addition of a little black strap molasses

 

St. Clements

oranges with plenty of lemon

Inspired by “Pirates of the Caribbean” this is a tart rough cut orange marmalade with lime lemon and rum

with pieces of dried apricot cooked in apple juice
