Sweet pickled fruits

Sweet pickled fruits are carefully prepared fruits gently poached in a vinegar and sugar syrup mildly flavoured with spices.

Serving suggestions

Pears

A mild sweet pickle spiced with cinnamon and ginger. Great with cold meats or cheese

 

Blushing pears

These are pickled in a rich coloured vinegar from cherries or damsons to give an interesting pink shade to the pears.

 

Peaches

A lovely golden coloured pickled fruit, Great with cold meats or cheese

 

Prunes

Traditional accompaniment for rich meats or game

 

Blueberries

My most extravagant pickle. Keep it for A special treat. Ideal with poultry, or try with Greek yoghurt.

 

Gooseberries

These tart pickles are great served as an antipasto. They are also the perfect accompaniment to smoked fish or oily fish such as herring and mackerel.

 

Christmas fruit pickle

Too good to keep just for Christmas, This pickle is made with dried apricots prunes and figs, and with spiced apple pieces.

 

Blackberries

Good with just about anything. Try it with duck.

 

Damsons

A robust versatile country pickle. Use with cold meats or roast meats.

 

Grapes

These pretty pickles are great to bite into. I use them with salads or as antipasto

 

Cherries

Possible the best way to preserve cherries. These are great with poultry or cheese.

 

Apple

I often make these as whole apple ring slices, flavoured with lemon, or in a dark blackberry vinegar. Try them as a change to apple sauce with roast pork.

 

Figs

A good Christmas pickle, Dried figs, soaked in Apple juice and poached in the spiced vinegar.

Mango

A beautifully coloured mild pickle. Try with cheese, or as an accompaniment to curry.
